Psalm 126 3 The Lord has done great things for us, and we are filled with joy.
This is a great variation on the traditional cole slaw recipes. Also a great use of the fresh summer vegetables.
1 small head of cabbage – chopped or shredded (the pre-packaged bags available in the grocery are also great time savers, but more expensive)
1 tomato – chopped fine (remove as much of the juice and seeds as possible) Add the tomato just before serving.
1 cucumber – peeled, quartered and chopped
1 small green pepper – chopped
Other garden vegetables such as: zucchini, onions, squash, carrots, celery, etc. can be added
Salt and pepper to taste.
Mix all together in a large bowl. Add or subtract vegetables to your desire.
Dressing – Mayonnaise mixed with a little water. For the amount of cabbage specified you would probably use about 1 Cup of Mayonnaise. Increase per your personal preference. You can also use your favorite cole slaw dressing. Refrigerate for several hours.
