I have not been very faithful to post on my blog.  Life, illnesses, etc. have kept me from getting back into a routine.  I am feeling lead to begin posting again and hope to do so at least once a week.  Since the second cookbook has come out I have continued to develop and collect recipes.  I constantly look for ways to stretch the food budget and use leftovers.  I am looking forward to getting back into the blog world.  I hope you will enjoy and be able to use some of these posts.  (more…)

1 Thessalonians 5:17   Pray without ceasing.

This is a cool salad for summer.  This is adapted  from a recipe of Patricia Yearwood’s.

2-4 lbs. seedless grapes – your choice:  red, white, black

1 8oz. pkg. cream cheese softened to room temperature (cut in half if using 2 lbs. grapes)

8 oz. container sour cream (cut in half if using 2 lbs. grapes)

2-4  tablespoons full of brown sugar – more or less to taste

1/2 cup finely chopped pecans

Wash and dry grapes and then cut them in half.  Mix the cream cheese, sour cream and brown sugar together.  Pour over the grapes and mix together.  Refrigerate for several hours to chill.  Top each serving with the chopped pecans just before serving.

This is what I made for my hubby this Valentine’s day.   Peanut butter is one of his favorites.  There are plenty of peanut butter pie recipes with the cream cheese and cool whip, but I wanted a pie that had a pudding filling.  This one is easy to cook and is really good.  Feel free to add more peanut butter if desired.

One 10 inch pie shell or two graham cracker crust pie shells (regular or chocolate)

3/4 cups sugar

1/3 cup corn starch

pinch of salt

4 cups milk

4 egg yolks

3/4 cups peanut butter

3 T. butter at room temperature

1 t. vanilla

Blind bake the pie shell if using a pastry style crust.  If you are using the graham cracker style crust there is no need to bake it first.

Combine the sugar, cornstarch and salt.  Mix together well with a whisk.  Combine the milk and the egg yolks and whisk together until bell blended.  Add the liquid mixture to the sugar mixture in a saucepan.  Cook over medium heat stirring constantly.  After mixture boils (this will be a low boil), let it boil for one minute.  Remove from the heat and add the peanut butter, butter and vanilla.  Allow to cool slightly and then pour into pie shell(s).  Refrigerate for about an hour to allow the pudding to completely set.

Serve with ice cream, whipped cream, a drizzle of chocolate or caramel sauce or all of these.

Philippians 1:6  God who began a good work in you will carry it on to completion until the day of Christ Jesus.

I haven’t tried this, but my granddaughter loves it.  Easy if you want a little dessert, but don’t want to make a large cake, etc.

1 box cake mix – any flavor

1 box angel food cake mix

Mix both together in a large container and store in zip loc bag or air tight container.

Use 3 T. of mix in a large coffee mug.  Stir in 2 T. of water.  Microwave on high for “1” minute.  Top with fruit, whipped cream or when cooled some frosting.  Enjoy.

Happy New Year and let’s remember the Reason for the Season.

Pastry for a 9 inch pie – homemade or purchased

Prehead oven to 350^ – place rack at lowest position

Butter bottom and sides of a deep 9 inch pie pan and fit the pie crust into the pie plate

Cheesecake Filling

8 oz. cream cheese – softened

1 large egg

1/2 cup sugar

1 t. vanilla

1/4 t. salt

1 & 1/4 cups chopped pecans

Beat all ingredients, except pecans, with an electric mixer until smooth.  Pour into crust and top with chopped pecans.

Pie Filling

1 cup light corn syrup

3 large eggs

1/4 cup sugar

1 t. vanilla

Whisk all ingredients together and pour over the pecans.

Place pie on a baking sheet.  Bake 50-55 minutes or until pie is set.  Cool on wire rack for about an hour.  Cover and chill is not served immediately.

I found this recipe posted in a magazine.  It was developed by a teenager.  The combinations and possibilities are endless and it tastes like homemade, long cooked fudge like your grandma used to make.

Prepare a 8 x 8 pan by placing parchment paper inside the pan.  You can also spray the paper with some nonstick spray.

1 14oz. can Sweetened Condensed Milk – I even used the low fat version and it worked just as well

1 14-16oz. bag of candy morsels – semi-sweet chocolate, milk chocolate, white chocolate, butterscotch, peanut butter, chocolate mint, etc.

Mix all of this together in a large microwave safe bowl.  Microwave in one minute intervals, stirring after every minute until all the morsels are melted.

Optional: Stir into the melted morsels chopped nuts (walnuts, pecans, pistachios, peanuts, etc.), butter brittle chips, coconut, dried fruits.

Pour this mixture into the 8 x 8 pan and place in the refrigerator to harden.  After it has hardened allow to sit at room temperature overnight so it can dry out.  Lift the fudge out of the pan with the paper.  Place on a cutting board, peel off the paper and slice into pieces. Store in an air tight container.  Enjoy.
