I am developing a new cookbook of easy to prepare, economical recipes. I know many of you have some great recipes that have gotten you through hard times. This contest will run until the end of December 2008. By submitting your recipe you are agreeing to allow me to use this recipe in future cookbooks, posts, or other uses. You will be credited with submitting the recipe, so be sure to tell me how you want to be mentioned: by your blog, e-mail, name, etc.
What do you get?????? A cookbook to the recipe I feel is the best suited to enter the book. Others may be chosen to be published, but there is only one winner. The cookbook is my original cookbook. I wrote this several years ago. The children kept calling back asking for this and that recipe. I self-published and have sold many copies: local bookstores, friends/family, E-bay, etc. These are basic recipes that definately have a Southern influence. Many people have told me this is the only cookbook that they use now. There are a 160 recipes in this cookbook. It is SOLD out, so don’t ask for a copy, EXCEPT to the winner. Yes, I am in the process of writing a sequel with new and improved recipes plus many of the old tried and true recipes.

Family Size – Make ahead and freeze
/2 lbs. ground beef(if you’re a healthy cook, substitute chicken or turkey)
3 med. size onions chopped
3/4 small BULB garlic chopped (It’s good for you!)
1 x-large green pepper chopped
3 carrots chopped
1 large jar favorite salsa
3 15oz. cans of diced tomatoes
3 cans chili beans(if you don’t have chili beans, substitute whatever beans you have-white, pinto, black…I like chili beans)
3 beef boullion cubes
2 cups water
3-4 tbls. chili powder
2 tsp. salt
2 tsp. oreagano
2 tsp. ground cummin
1/2 tsp. cinnamon
1/2 tsp. cayenne pepper(can be adjusted to taste)
In LARGE pot, brown beef, drain and add chopped veggies. Stir till veggies are softened and meat is lightly browned. Add tomatoes, salsa, beans, water, and bullion. Stir well. Add all other seasonings, stir and simmer for about an hour. Top with cheese, sour cream…whatever you like. ENJOY! Makes lots so you can freeze in individual containers and reheat for quick meals.

Well, I don’t have any ‘economical’ ones because I get them all from you!
I have 5 boys and this is by far their favorite meal. Its as comforting as chicken noodle soup (I think!) and very cheap to make.
Chicken and Noodles
2 chicken leg/thigh quarters- cooked in crock pot, put the chicken in crock and cover with water, add salt, pepper, 1 or 2 chicken buillion cubes, onion powder, and garlic powder. Cook 6-8 hours on low or 3-4 hours on high (basically until the meat is falling off the bone.)
When meat is done cooking, remove from crock pot and set aside for a few minutes.
Put a large 4 quart pot of water on the stove, add salt and bring to a boil. When the water comes to a boil, add a 16 oz pkg of shell macaroni and cook to package directions.
In the meantime while water is coming to a boil and pasta is cooking, take the chicken and remove skin, then remove the meat from the bones. Break into bite sized pieces.
By now the pasta should be done- pour into a colander- let drain.
Strain the broth the chicken cooked in. (I use a fine screen type strainer) Pour the strained liquid into the pot you just used to boil the pasta. Bring to a boil. Make a gravy, I use cornstarch mixed with a little milk, pour into boiling broth and stir until thick.
Add: 1 can cream of chicken soup
1 can creamed corn
1 can peas-drained
1 can sliced carrots- drained and quartered.
Also add the cooked pasta and the cooked meat. Mix well until everything is nicely combined and make sure everything is heated through.
My children request this often. It makes a very large pot of food for less than $5.00 for the whole pot! We usually will have leftovers with this, but it goes fast.
