The Today Show had Mark Bittman (or is it Pittman) show how to use leftovers. When I saw the show I said, “I can do that.” I have been doing that for years. I also know that most people just eat the leftovers the same way they were when they cooked them. There are so many other opportunites. In fact I am trying to develop a cookbook with that in mind. On this blog there are many ideas of how to use leftovers. I had to learn to “disguise” leftovers as my dear hubby will NOT eat the same thing twice (he does sometimes now after 37 years of marriage). Sometimes the leftover dishes are better than the original. I find myself wanting to fix a pork roast so I can make the bar-b-que for sandwiches and the rich pork stew.
I’ll probably never be as highly paid as the Today Show chef, but I have been making potato cakes for YEARS. Most top chefs could learn a thing or two from women who have had to cook for their families and maximize their food dollar. The Southern cook has always been resourceful as have many others in the country. I hope you will “walk around” this blog and hopefully find some good leftover ideas.

Here is an idea for when you only have a couple tablespoons of vegetable or a few small pieces of meat left over from a meal. Keep two bags in your freezer. One for veggies and one for meats. Just put them into the bags until you have enough for a nice soup. You can also freeze the broth/stock leftover from cooking, and the veggie and pasta waters – making the soups near about free.
