Leftover Magic
 

Use leftover mashed potatoes to create a twice baked potato casserole.  Mix potatoes with grated cheddar cheese, sour cream and chopped onions.  Reheat in the microwave.  Top with crumbled     bacon or canned bacon bits.
Great side dish for ham, roast beef or chicken.
