I have been absent from posting since before Christmas. This time of year always seems to be so hectic, as it is with everyone. We had a wonderful family celebration on Dec. 26. Our son and daugher-in-law visited her family in Michigan and returned on Christmas day so we did a Brunch the day after. This was great because that is my husband’s birthday. I feel sorry for him because he has his birthday the day after Christmas.
The grandkids really knew what to do this year with presents. It has hard to get pictures because they started ripping into the paper was soon as they got their present. We only gave each one one large item and two smaller things since they get so much during the year and from other relatives. They are such precious things and are really appreciative of anything that you give them. The big hit of the year was GK# 3 getting a stuffed Junior (Veggie Tales) that sings a nighttime story and his eyes light up. He did not let go of it the entire day. GK #1 called to tell us how “proud” he was of us for getting him his Cars Racetrack. So funny the way kids put words together, they don’t quite have the entire meaning of what they have heard.
On Dec. 29th my two sons and their children traveled with us to visit my husband’s father. There were four generations , from a 9 month old to an 8o year old, and about 40 people. Grandpa had fried “40″ lbs of chicken the day before. He is famous for his fried chicken, it is very salty and greasy, but wonderful. By the time all of us ate there was not much left. We had a good day, but a long trip (3 hours one way). I made the traditional mince meat pies for him. He eats one and freezes that others to eat later.
For New Year’s Eve we slept through it. My husband bought some bubbley, but we will have to break that out another night. We spend today doing inventory on our businesses. Later in the afternoon I babysat with two of the GKs.
2008 should bring some changes in my life. Our church’s new expansion is going to be complete. I hope to be able to establish a “free lunch program” at least weekly. We have a wonderful commercial kitchen. My baby sitting should decline since the daughter-in-law will be completing her residency. I really feel I am being called to minister through feeding people.
I look forward to another year. I hope I can be intune to God’s message for my life and to do his will. If anyone has any recipes economical meals for the free meal, let me know.
